Chutneys are the must haves for any chaat recipes. They compliment really well with the main ingredients of chaat. Little sweet, tangy, spicy, garlicky flavors of chutneys makes the whole chaat tastes wonderful. I make a batch of chutneys and freeze it in air tight containers. That way I always have them on hand whenever I am in mood of chaats, which happens frequently with me ;).
3 Essential Chutneys for Chaat
Ingredients
For Date & Tamarind Chutney
- 1 cup dates
- 2 tbsp tamarind paste or ¼ cup tamarind
- 2 tbsp jaggery
- 1 tsp red chili powder
- 1 tsp coriander-cumin powder
- Salt to taste
For Green Chutney
- 2 cups chopped coriander don’t discard the stems
- 1 cup chopped mint
- ¼ cup peanuts
- 4-5 green chilies increase or decrease the amount depending on the spiciness
- juice of 1 lemon
- ½ inch ginger piece
- Salt to taste
For Garlic Chutney
- 10 dry red chilies
- 12-15 Garlic
- 1 tsp kashmiri red chili powder
- ¼ cup roasted chana daal or dalia
- Salt to taste
Instructions
To make Date and Tamarind Chutney
- In a sauce pan cook dates, tamarind paste and jaggery with a cup of water. Once it starts boiling cover it and let it sit for a while.
- Once the mixture cools, process the mixture in a blender adding water to adjust the consistency.
- Mix in the red chili powder, coriander-cumin powder, and add salt to taste.
To make Green Chutney
- Process everything in a blender adding water to adjust the consistency.
To make Garlic Chutney
- Process everything in a blender adding water to adjust the consistency.
