I am someone who loves breakfast and its my most Fav meal of the day. A good breakfast gives me so much energy and joy to take my day ahead. Some weekends I love to wake up early and get into my apron to make special breakfast treats for my family. Just a way of showing love and care to my loved ones. Banana Walnut bread is one such treat which can be enjoyed for breakfast and can even snack on. Sometimes I also make double batch of it and share it with my friends. Who doesn’t love a slice of yumminess?
I have been making Banana Walnut bread since last so many years and I feel this recipe brings out the most moist, dense and perfectly sweetened banana bread. It’s an easy recipe and you don’t need any mixer to make it. All you need is a mixing bowl, spatula and whisk. This is the perfect thing to make if you have those darkened and over ripe bananas sitting on counter top which doesn’t taste good to snack on, but makes delicious bread.
Nuts are totally optional but I love my slice of Banana bread with little extra Walnuts. So I also put more walnuts on top of the crust.
For me, a cup of hot coffee and a slice of banana bread for breakfast just makes my day. Yes, the picture above is something I love to have in the bed and I do make myself such treats some mornings.
Banana Walnut Bread
Ingredients
- 1 ¼ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 2 eggs
- ½ tsp vanilla extract
- 1 stick unsalted butter at room temp
- 1 cup sugar
- 3 ripe bananas smashed
- ½ cup chopped walnuts
- 1 loaf pan or 9’ x 5’ x 3’ pan
Instructions
- Preheat the oven at 350°F.
- Sift flour, baking soda and salt in a bowl and set it aside.
- In another bowl, cream together butter and sugar till it turns light creamy.
- Combine 1 egg at a time and mix.
- Add vanilla extract and mashed bananas and mix. At this point the batter will look curdled.
- Using a spatula mix dry ingredients to wet until nicely mixed. DO NOT OVERMIX.
- Add chopped walnuts to the batter and give it a final mix.
- Pour it in a greased 9’ x 5’ x 3’ pan or a loaf pan and bake it at 350°F for 55 mins or till the inserted toothpick comes out clean.
- Let it completely cool on a cooling rack before slicing it into half inch slices.
