Banana Walnut Bread

Ingredients

all-purpose flour

baking soda

tsp
salt

eggs

vanilla extract

stick unsalted butter
at room temp

cup
sugar

ripe bananas smashed
½
cup
chopped walnuts
1
loaf pan or 9’ x 5’ x 3’ pan
Instructions
Preheat the oven at 350°F.
Sift flour, baking soda and salt in a bowl and set it aside.
In another bowl, cream together butter and sugar till it turns light creamy.
Combine 1 egg at a time and mix.
Add vanilla extract and mashed bananas and mix. At this point the batter will look curdled.
Using a spatula mix dry ingredients to wet until nicely mixed. DO NOT OVERMIX.
Add chopped walnuts to the batter and give it a final mix.
Pour it in a greased 9’ x 5’ x 3’ pan or a loaf pan and bake it at 350°F for 55 mins or till the inserted toothpick comes out clean.
Let it completely cool on a cooling rack before slicing it into half inch slices.
Notes
You can store the slices in an air-tight container at room temperature for a week.
