Quick Avocado Bruschetta With Balsamic Sauce
Ingredients
- 1 Baguette or any rustic bread sliced
- 2 avocados halved seeded, peeled and diced
- 1 cup cherry tomatoes halved
- 10-12 basil leaves chiffonade
- 2 tbsp olive oil
- 1/2 cup balsamic vinegar
- 2 tbsp brown sugar
- Salt & black pepper
- some more olive oil to drizzle on baguette slices
Instructions
To make Balsamic sauce
- Boil balsamic vinegar and brown sugar together. Turn the heat on simmer and let it go for 5 minutes. Let it cool completely before using.
- In a bowl, mix diced avocados, cherry tomatoes, basil leaves, olive oil with salt and pepper to taste.
- Brush baguette slices with olive oil.
To toast Baguette slices
- In OVEN: Preheat the oven at 375 degrees and place all the slices on a baking sheet. Bake for 10 minutes or until golden brown.
- On GRILL PAN: On hot grill pan place slices and toast it on both the sides until golden brown.
- Top each toasted baguette slices with avocado and cherry tomatoes mixture.
- Drizzle prepared balsamic sauce on each toast and serve immediately.
