Quick Avocado Bruschetta With Balsamic Sauce

Ingredients

  • 1 Baguette or any rustic bread sliced 
  • 2 avocados halved seeded, peeled and diced
  • 1 cup cherry tomatoes halved
  • 10-12 basil leaves chiffonade
  • 2 tbsp olive oil
  • 1/2 cup balsamic vinegar
  • 2 tbsp brown sugar
  • Salt & black pepper
  • some more olive oil to drizzle on baguette slices

Instructions

To make Balsamic sauce

  • Boil balsamic vinegar and brown sugar together. Turn the heat on simmer and let it go for 5 minutes. Let it cool completely before using.
  • In a bowl, mix diced avocados, cherry tomatoes, basil leaves, olive oil with salt and pepper to taste.
  • Brush baguette slices with olive oil.

To toast Baguette slices

  • In OVEN: Preheat the oven at 375 degrees and place all the slices on a baking sheet. Bake for 10 minutes or until golden brown.
  • On GRILL PAN: On hot grill pan place slices and toast it on both the sides until golden brown.
  • Top each toasted baguette slices with avocado and cherry tomatoes mixture. 
  • Drizzle prepared balsamic sauce on each toast and serve immediately.
