Methi Bajri Vada is one of the traditional Gujarati snacks. They are fritters made using fresh Fenugreek leaves and Bajri or Millet flour with other spices and flavourings. They have crispy texture from outside and are soft from inside. They are perfect in cold weather with a cup of tea or coffee. A simple recipe with very basic ingredients.
I like that bitter taste of methi leaves in this vadas, especially after getting fried. But it is totally optional. If not using methi leaves, add little more yogurt to form dough.
To form vadas there are 2 options: You can make small balls and flatten it in your palm or you can roll it big and using a cookie cutter form vadas. I, personally like using the second method as its fast and all my vadas are of same size. I form all the vadas first and then fry.
Methi Bajri Vada (Fenugreek and Millet Fritters)
Ingredients
- 1 cup bajri or millet flour
- 1/2 cup wheat flour
- 1 cup washed and finely chopped fenugreek leaves
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tbsp green chilli paste
- 1 tbsp sesame seeds
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tbsp coriander-cumin powder
- 2-3 tbsp sugar
- 1/2 cup whisked yogurt
- oil for frying
- salt to taste
Instructions
To make Dough
- Combine bajri flour, wheat flour, fenugreek leaves, ginger paste, garlic paste, green chilli paste, sesame seeds, turmeric powder, red chilli powder, coriander-cumin powder, sugar and salt to taste.
- Add whisked yogurt and mix it with your hand. It will start to come together. Form a stiff dough.
- Add a tablespoon of water at a time if required.
- Let the dough rest for 10-15 minutes.
To make Vadas
- Heat the oil in a pan for frying over medium heat.
- Take a small orange size portion of dough, make it smooth and flatten it.
- Roll the dough till you get around 1/4 inch thickness.
- Using a cookie cutter of 1-1 1/2 inch diameter, cut it into rounds. Put it in a plate or on parchment paper so it doesn't stick to the surface. Keep rolling and shaping them till you finish all the dough
- Drop 5-6 rolled circles in hot oil at a time. Fry for a minute on each side or they turn golden brown in color. Remove it on a paper towel.
- Enjoy them hot with a cup of tea or coffee.
