Methi Bajri Vada (Fenugreek and Millet Fritters)

Ingredients

  • 1 cup bajri or millet flour
  • 1/2 cup wheat flour
  • 1 cup washed and finely chopped fenugreek leaves
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tbsp green chilli paste
  • 1 tbsp sesame seeds
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tbsp coriander-cumin powder
  • 2-3 tbsp sugar
  • 1/2 cup whisked yogurt 
  • oil for frying
  • salt to taste

Instructions

To make Dough

  • Combine bajri flour, wheat flour, fenugreek leaves, ginger paste, garlic paste, green chilli paste, sesame seeds, turmeric powder, red chilli powder, coriander-cumin powder, sugar and salt to taste.
  • Add whisked yogurt and mix it with your hand. It will start to come together. Form a stiff dough.
  • Add a tablespoon of water at a time if required.
  • Let the dough rest for 10-15 minutes.

To make Vadas

  • Heat the oil in a pan for frying over medium heat.
  • Take a small orange size portion of dough, make it smooth and flatten it.
  • Roll the dough till you get around 1/4 inch thickness.
  • Using a cookie cutter of 1-1 1/2 inch diameter, cut it into rounds. Put it in a plate or on parchment paper so it doesn't stick to the surface. Keep rolling and shaping them till you finish all the dough
  • Drop 5-6 rolled circles in hot oil at a time. Fry for a minute on each side or they turn golden brown in color. Remove it on a paper towel.
  • Enjoy them hot with a cup of tea or coffee.
