Quick Avocado Bruschetta With Balsamic Sauce - slice of toasted baguette topped with avocados, cherry tomatoes, basil and balsamic vinegar reduction.

This Avocado Bruschetta is a slight twist to traditional Tomato-Basil Bruschetta. Its perfect for anytime snack or also as a party appetizer. Since summer is about to end, this is the best way to enjoy creamy ripe avocados. If you are bored making and eating Guacamole with chips, try this recipe. The mixture of cherry tomatoes,basil and creamy avocados with some salt, pepper and olive oil goes perfect on a slice of crusty bread. And drizzle of balsamic vinegar sauce brings perfectly sweet balance on this bruschetta.

The avocado and cherry tomatoes mixture is done in no time or can also be made and refrigerated in advance. If you are grilling outdoors, this is the best thing to bring on table. Prepare avocado, tomatoes and basil mixture at home, toast bread on outdoor grill, top the mixture and serve it. Everyone will love it and will be surprised by this way of using avocados on bruschetta.

Quick Avocado Bruschetta With Balsamic Sauce

Course: Appetizers
Servings: 4 servings

Ingredients

  • 1 Baguette or any rustic bread sliced 
  • 2 avocados halved seeded, peeled and diced
  • 1 cup cherry tomatoes halved
  • 10-12 basil leaves chiffonade
  • 2 tbsp olive oil
  • 1/2 cup balsamic vinegar
  • 2 tbsp brown sugar
  • Salt & black pepper
  • some more olive oil to drizzle on baguette slices

Instructions

To make Balsamic sauce

  • Boil balsamic vinegar and brown sugar together. Turn the heat on simmer and let it go for 5 minutes. Let it cool completely before using.
  • In a bowl, mix diced avocados, cherry tomatoes, basil leaves, olive oil with salt and pepper to taste.
  • Brush baguette slices with olive oil.

To toast Baguette slices

  • In OVEN: Preheat the oven at 375 degrees and place all the slices on a baking sheet. Bake for 10 minutes or until golden brown.
  • On GRILL PAN: On hot grill pan place slices and toast it on both the sides until golden brown.
  • Top each toasted baguette slices with avocado and cherry tomatoes mixture. 
  • Drizzle prepared balsamic sauce on each toast and serve immediately.
