Mumbai street food is my favorite. Tawa pulao, a rice dish very popular mumbai street food which is prepared on Tawa with some boiled vegetables and pav bhaji masala. Yes, its pav bhaji masala that makes it taste different then any other pulao. You don’t need Tawa to make this dish, it can be made in a non-stick skillet and any flat pan.
This is a perfect thing to make if you have some leftover rice. I suggest not using hot cooked rice as it will break and pulao will look like khichdi. I like spicy tawa pulao so I add chopped green chillies to it, but you can skip that for milder pulao. It can be had just with some curd and sliced onions but I like to add a layer of cheese to give a more unhealthy mumbai street food touch to it. For that, take a bowl and add half prepared pulao to it. Add a layer of shredded processed cheese and again fill the bowl with pulao. Invert the bowl on a plate and devour it.
Tawa Pulao
Ingredients
- 2 cups of cooked rice
- 2 tbsp of oil or butter
- ½ cup finely chopped onion
- 1 cup finely chopped tomato
- ½ cup boiled green peas
- 1/4 cup diced and boiled carrots
- 1 small boiled and cubed potato
- ½ tsp of turmeric powder
- ½ tsp of red chilli powder
- 1 tbsp of pav bhaji masala
- 1 green chilli
- Coriander to garnish
Instructions
- In a nonstick pan, heat up some oil or butter and add onions to it. Add chopped tomatoes and salt so that tomatoes start softening.
- Add boiled peas, boiled potato, carrots and all dry spices. Mix it and cook it from 2 minutes. If the mixture feels too dry and is sticking to pan, add 1/4 cup of water and let the mixture dry before you add rice.
- Add cooked rice to it and mix it gently trying not to break the rice.
- Garnish it with coriander and serve with some cold yogurt and sliced onion.
