In a nonstick pan, heat up some oil or butter and add onions to it. Add chopped tomatoes and salt so that tomatoes start softening.
Add boiled peas, boiled potato, carrots and all dry spices. Mix it and cook it from 2 minutes. If the mixture feels too dry and is sticking to pan, add 1/4 cup of water and let the mixture dry before you add rice.
Add cooked rice to it and mix it gently trying not to break the rice.
Garnish it with coriander and serve with some cold yogurt and sliced onion.
