Tzatziki is a cool refreshing sauce made from thick greek yogurt, shredded cucumber, garlic and herbs. It goes perfect with any Mediterranean recipes. It is best served cold with hot falafels, kabobs and grilled vegetables. It can also be had as a dip with some warm pita bread.
Tips:
- How to cut cucumber: cut half lengthwise and take out all the seeds using a small spoon. Doing this is very important.
- Always strain water out from the shredded cucumber properly. If you have time put it in muslin cloth and let the water out or you can just use your hands to squeeze out all the liquid.
- I prefer making Tzatziki fresh as dill becomes very overpowering after it sits more in the yogurt. Also cucumber keeps oozing water which makes the sauce runny.
Tzatziki Sauce - Greek Cucumber Yogurt Sauce
Ingredients
- 1/2 english cucumber
- 2 cups greek yogurt
- 1 tbsp chopped dill
- 1 clove of finely minced garlic
- juice of 1 lemon
- salt and pepper
Instructions
- In a bowl, peel and shred the cucumber. Add little salt to sweat the cucumber and let it sit for 10 mins. Squeeze out all the liquid from it making sure its nice and dry.
- Combine greek yogurt, shredded cucumber, dill, lemon juice and garlic. Let it sit in refrigerator for 10-15 mins and serve.
