Preheat oven to 300F.
Mix oats, almonds, walnuts, sugar, salt and cinnamon in a big bowl. (Note: Do not add any dried fruits to granola at this point.)
In a small bowl, whisk honey or agave, vegetable oil and vanilla extract.
Mix the wet mixture to dry mixture. Spread it on a large baking dish.
Bake for 30-35 minutes, tossing every 10mins for even cooking.
Let it cool in the baking pan. Once cool, pack it in air tight container.
